Just a thought. Spray foam rim joist, seal osb gaps and use Rockwool (mineral wool) batts in walls. Good insulator, soundproofing, water resistance and easy to work with. My brother spray foamed a bathroom ceiling and it was NOT fun. Gravity worked well that day and he wore the proof. Got down his shirt and had to shave his chest. He also didn’t look bad in a crew cut. Need less to say, wear protective gear.
Greatly enjoy following the progress as weather here in north central Michigan has slowed things down.

At 26:24 you show the junction box where the supply line comes in and say, “just a junction box that’s going to be covered. Nobody will ever see that.”
NEC doesn’t allow burying any junction boxes. Put a blank plate on it so it’s still accessible. You won’t even notice it after a while. Don’t cover it with wall board or ship lap.
